What does 'assistant to...' jobs involve?

Whenever I watch movies I always see 'assistant to...[movie star]' in the credits...this always sounds like a cool job helping out a famous actor...but what does it actually involve and how can I find out more about it?

(I'm just about to leave school so I'm thinking about careers in film atm!) Any help appreciated,
