Depends on the job and the prospects I suppose. Any more details eg old and new job, difference in size/clients/prospects etc...?
You could say that there is more scope for training and development but this may not work if they want someone to stay put.
Likewise there are different responses depending on whether you are going bigger/smaller/staying the same.
Is it the same industry or different and is there a different client/market base etc... or different working practices?
