Employer's maladministartion of salary insurance

After a two-year battle, my employer's insurers have declined my claim to salary replacement.

My employer has admitted that their administration of the claim was at fault, and that they are prepared to compensate me in full for the amounts owed.

My question is what is an appropriate rate of interest that should be applied? Also, should there be an element of compensation? I have had to manage for an extended period whilst unwell without an income.
