Is there any good programs out there where you can take a song and mess about with it, adding and taking bits away and whatnot?

Even "Windows Movie Maker" does basic fade in fade out and basic blending, cutting chopping etc, free download!
Sure you can cut and chop and add extra bits, but you CAN NOT remove any parts with any degree of success.
If you can find an oven that will unbake a cake and separate out its ingredients, you might stand a chance of unmixing an audio file.

SquareBear overstates a bit. It depends on the stereo mix of the original and you can't specifically remove stuff without affecting other things.

However I have heard lead vocals virtually cancelled out by subtraction of the chanels. It leaves the backing vocal and the ambience of the original vocals but the effect can be quite profound. It does take away some of the instruments sounds too.

This is what I am saying. The DIY acapellas I have heard are very wishy washy and all have other sounds in the background.
