Why can't an entire house be lit by one bulb using fiber optics?

It could. Two possibilities are: 1) light the entire house at the same time, and 2) use a switching mechanism to light one room at a time.
1) Each room would be very, very dull.
2) Would cost much more than a bulb in each room. Not environmentally friendly.
