How does my Sky box know which of the regional BBC 1 channels to put onto channel 101, confining the rest to the 980s?

It's your viewing card not the box that does it. The card is registered to your address and so using the postcode you provided to Sky arranges the regional channels accordingly.

Ah, that makes sense, except that it will work without a viewing card.

Perhaps it then works from the last known configuration?
