What do they call that sticking out thing on plastic products (especially toys) left over from the hole through which the mould was filled?

Sprue is the name of the larger leftover bits. The runner connect the sprue via a gate (break off point) and on larger complex moulds there may be a top riser simular to the sprue and runner as well as multiple runner and gates. Flashing is the name given to very thin slivers of material at the joins of two mould halves and is only common when the mould ages or the fill pressure is too high
