How do the gas and electric companies compete against each other. How can your gas be supplied by British Gas one day and Scottish Power the next? If it all comes down the same pipe/cables  How does this happen?

They all feed their gas and electricity into a centralised system.  What you consume may well be gas piped in by another producer but the nett effect is that you consume 'x' KWH of gas charged to you by your supplier.  Electricity is the same but its quality doesn't vary so wherever a producer's electricity is fed into the grid doesn't matter as it all goes towards the national load.
TRANSCO (previously part of British Gas) is the company responsible for the supply network, i.e. the pipework. Your gas is metered at point of entry to your dwelling so it is just a case of agreeing a meter reading when changing contracts.
