The optimal gap is reckoned to be 16mm between the panes. Any less and the 'thermal sandwich' of glass/air/glass is not making maximum use of the poor transmission of the still air in the sandwich. Any more and the air in the gap starts to move around, reducing the overall insulation effect.
There is no minimum as such - any DGU sandwich of glass/air/glass will help reduce heat transmission across the unit.
