Bolting coriander

I bought a coriander plant which I put in the garden. Harvested a few leaves and now it has bolted. I am not too bothered because I will use the seeds, but once I have harvested the seeds is the plant had it? Or do I cut it back? Will it over winter?

If you cut them back you will get a few more leaves butr they will be smaller and tough,, better to sow at intervals like lettuce, and put the plants that bolt on the compost heap once youve collected the seed

Thanks Rowan. I'll put some new seeds in. I really can't not have fresh coriander!!
