I am growing a ginger plant - very rapidly, about half a cm a day!! - how can I preserve the stems?

Preserve them for use in cooking? I have heard it said that one easy way is to freeze them (unpeeled) in a resealable food storage bag. Then when you want to add ginger to food you can grate the frozen root and then put the rest back in the freezer.

Thanks for your reply, but it's the stems I want to preserve - any ideas? I suppose freezing would be OK...
