If you mean how soon after applying the grout, it should be done immediately. If you let it dry on the tiles you'll have a mess... Only apply the grout to a few square feet before cleaning with the sponge and a dry cloth. following that, within 24 hours go back over and clean any remaining haze...

Use a proper 'grout float' you'll have virtually no grout to wipe off.
