in the 1800's. almost all of these were men...now only 3% are men..what is it..

Midwives, perhaps? (The 'wives' element does not mean they must be women...the word 'midwife' actually means 'with-woman'.)
Teachers?
Bank personnel?
typists? (They used to be called 'typewriters')
I'm sure it is typists.

I'd go with typists / secretaries.
Actors?

There used to be some sort of statute preventing women from acting in plays, and all parts were played by men. I know that this was certainly the case in Elizabethan and Restoration period England, but I don't know if the law still existed in the 1800's.
Pretty sure its secretaries!! Please tell us!!!
