I've installed MacOS on a Windows 11 PC using HyperV. My PC has a native screen resolution of 2560 x 1440.  The HyperV window itself will use full screen but the MacOS running within it stays at 1024 x 768 (around half the available screen) which is the only scaled option available in display settings on the Mac, can anyone help?

The limited display settings within your MacOS virtual machine indicate it is a work in progress and that you will likely find many additional similar shortcomings. A logical workaround to try for this is to adjust Windows settings. Settings>System>Display>Display Resolution 1024 x 768.
Once you restart the virtual machine, it may display more to your liking.

Nothing useful to add as I've no expertise: but, just thought I'd point out what a strange name they chose.
