Vegetarian Mushroom Stroganoff

A quick, easy and very tasty vegetarian variation of the popular traditional Russian stroganoff.  For anyone who loves mushrooms this is a perfect, meal, I recommend wild mushrooms for that extra taste of luxury, they go beautifully with the rich creamy sauce. 

Mushroom stroganoff is a perfect dinner for winter. The rich earthy flavours of the mushroom and creamy warm sauce are very comforting on a cold evening.  A wonderfully quick convenient recipe that takes less than 20 minutes, ideal for a busy weekday.

Ingredients

  • 45 ml/3 tbsp olive oil
  • 500g mushrooms (3 different types)
  • 1 onion, sliced
  • 2 cloves of garlic (crushed)
  • 150ml white wine
  • 300ml crème fraiche
  • 1 tbsp of chopped fresh thyme
  • Chopped parsley to garnish
  • 1tbsp paprika
  • Rice to serve

Method

  1. Heat the oil in a large frying pan over low heat.  Cook the onion and garlic, until soft and stir in the paprika.
  2. Add the mushrooms and white wine, bring to the boil, then reduce the heat and simmer.
  3. Stir in the crème fraiche and heat to just below boiling point. Stir in the thyme, sprinkle over parsley.
  4. Serve with rice.
