Tiger Prawn And Coriander Salad

Tiger prawn and coriander salad is a quick easy side dish for two or a light healthy lunch for one. This simple dish makes the most of firm juicy prawns; using raw prawns to cook with, instead of the already cooked ones, makes a huge difference to taste and texture, the prawns are firmer and have more flavour.

Coriander is a wonderful herb, it is very fragrant and adds a fresh flavour to a dish. Coriander, limes and prawns are a wonderful combination of fresh, clean flavours that makes a delicious, quick, simple lunch.

Ingredients

  • 200g king prawns, raw and peeled
  • 1 lime
  • Handful coriander
  • 2 tbsp olive oil
  • 200g mixed salad leaves
  • Ground black pepper

Method

  1. Pan fry the prawns with pepper to taste, cook for a couple of minutes until pink and hot.
  2. Place the salad leaves into a bowl, add the prawns, squeeze in the lime juice and drizzle the olive oil on top.
  3. Rip the coriander, add to the salad and toss gently.
