Singapore Chilli Crab

Chilli crab is one of Singapore most delicious dishes, sweet tender crab in a sweet and sour tomato and chilli sauce.  This meal is full of flavour, lemon grass, fresh ginger and garlic, but the most important ingredient is surprisingly ketchup.

Chilli crab is very moreish and wonderful food, the best way to eat it is just getting stuck in with your hands and getting messy. Serve with rice and you have a delicious tasty fragrant seafood dinner perfect for summer.

Ingredients

  • 1 Crab, about 900g in size
  • 1 sprig of coriander, chopped
  • 1 tablespoon of sugar
  • Salt to taste
  • 2 tablespoons of cooking oil
  • 120ml cup of water
  • 5 tbsp ketchup
  • 2 tbsp sweet chilli sauce
  • 1 Lime

Spice Paste:

  • 8 small red chillies, deseeded
  • 3 cloves of garlic
  • 1 inch of fresh ginger
  • 2 inches of lemon grass,  white part

Method

  1. Clean the crab and chop it into pieces.
  2. Blend the paste ingredients to make a smooth paste, you may need to add a little water.
  3. Heat up your wok and add cooking oil.
  4. Stir fry the paste until fragrant.
  5. Add the ketchup and chilli sauce.
  6. Add the crab and water and stir fry.
  7. Add in sugar, water, a little salt to taste and continue stirring for about 2 minutes, then leave to gently simmer, cover and stir occasionally, it should take 10 to 15 minutes to cook depending on type of crab.
  8. Dish up, garnish with chopped scallions, ¼ lime and serve hot.
