Ham And Poached Egg Salad

A wonderful warm salad great for a light lunch or side dish, but also makes a healthy filling breakfast. Eggs and ham is perfect breakfast food, and if you are trying to be healthy, poached egg is a wonderful alternative to the typical fried egg for breakfast.

A large fragrant salad full of rocket and basil will keep you feeling fresh and full until lunch while being healthy and low fat. A perfect start to the day. 

Ingredients

  • 2 eggs
  • 4 slices of ham, chopped
  • Balsamic vinegar
  • ½ lemon
  • 1 tbsp olive oil
  • Handful basil
  • 250g rocket
  • 1 shallot, finely sliced

Method

  1. Mix the olive oil, lemon juice and balsamic vinegar together.
  2. Toss the shallots, basil, rocket and ham together, divide onto two plates.
  3. Poach the two eggs, when done place one on each plate on top of the salad and drizzle the dressing on top.
