Gnocchi

Gnocchi are Italian dumplings, this particular type of gnocchi is made with potatoes and is very easy and cheap to make as it only consist of potatoes and flour. Gnocchi is the food of ancient Rome and is the ancestor of most dumplings made in Europe today.

In Italy gnocchi is eaten as an alternative to pasta and is commonly served with tomato sauce or pesto and makes a delicious side dish that goes wonderfully with fish, Italian sausage, chicken or beef.

Ingredients

  • 675g large potatoes
  • 115g plain flour, plus extra for dusting

Method

  1. Put the potatoes in a pan of cold water. Bring to the boil and cook for 20-25 minutes. Drain well. When cool enough to handle, peel them and pass through a food mill into a bowl.
  2. Add the flour a little at a time, until mix is smooth and slightly sticky, add salt to taste. Roll out mix onto a floured board to form a sausage 1cm in diameter.
  3. Cut into bite size pieces and roll one piece at a time onto a floured fork to form little ridges in the gnocchi. Put on a floured tray.
  4. To cook gnocchi boil for 3-4 minutes.
