Chicken Marsala

Chicken marsala is a traditional, old, Italian dish, of chicken and mushrooms served in a marsala sauce. It is a simple delicious dish full of rich warm flavour.

Marsala is a type of Italian fortified wine that tastes similar to port and is very popular to cook with. Marsala is a wonderful wine to keep stocked up in your cupboards, it can be added to savoury dishes as a sauce or marinade and is perfect for making rich luxurious desserts. It will never go to waste as it tastes great without the cooking, served just as wine.

Marsala brings a warm rich flavour to the chicken and mushrooms. This dish is very simple to make but perfect for a dinner party or a cosy meal for two. Chicken marsala is a very warm comforting dish ideal for the cold winter months.

Ingredients

  • 4 chicken breast
  • Flour for dusting
  • 100ml marsala wine
  • 100ml chicken stock
  • 2 shallots
  • 75g mushrooms
  • 1 tbsp olive oil

Method

  1. Dust the chicken in flour.
  2. Heat the olive oil in a frying pan and cook the chicken until cooked through. Then remove the chicken and set aside.
  3. Add the shallots and gently fry until tender.
  4. Add the marsala wine and stock, bring to a boil then simmer.
  5. Add the mushrooms and chicken, cook until mushrooms are tender and sauce has reduced.
