Champagne Jelly

Champagne and strawberries are a perfect match, they work wonderfully together as a jelly. Strawberries suspended in a sparkling champagne jelly makes a decadent but youthful and fun dessert.

Champagne jelly is perfect for a girly night in or the start of a fabulous night on the town. Make some Thursday evening, they are very quick and easy to make, and your champagne jellies will be ready in time for the weekend. All your girlfriends will love this wonderful dessert, it looks fabulous as well as tastes divine. For a fabulous looking dessert you can serve the jelly in a Martini glass, or a champagne flute, frosted with sugar round the rim of the glass for a truly sophisticated look.

If champagne is a little too rich for your blood try using prosecco. Prosecco is an Italian dry sparkling wine, it is delicious and a good bottle is considerable cheaper than a good bottle of champagne. Champagne is the preferred choice and far more luxurious, but it should be a delicious champagne you enjoy drinking; if you don’t enjoy it you won’t enjoy the jelly. This dessert is all about indulgence.

Ingredients

  • 4 sheets of gelatine
  • 230ml water
  • 190g sugar
  • 750ml, 1 bottle of champagne or prosecco
  • 300g strawberries

Method

  1. Soften gelatine sheets in a bowl of cold water for 5 minutes.
  2. Boil the water in a saucepan and add the sugar, stir until sugar dissolves.
  3. Remove the gelatine from the water and squeeze off the extra liquid.
  4. Add the gelatine to the saucepan and stir until it has dissolved.
  5. Remove from the heat and stir in the champagne or prosecco.
  6. Slice the strawberries, save 6 strawberries for decoration, divided strawberries between 6 wine glasses and pour the jelly mix on top.
  7. Refrigerate overnight.
