Could anyone give me a good chinese curry recipi.I have tried a few but they never seem to come out as good as they say. It seems to be the worlds greatest secret,heres hoping it would be nice to impress the good lady,many thanks.

We do this one often, especially in the winter:

Ingredients
3 Large Chicken Breast -- Chopped
3 Tablespoons Olive Oil
1 Medium Onion -- Chopped
1 Teaspoon Ginger -- Chopped
1 Medium Dried Chile -- Chopped
1 Teaspoon Curry Powder
1/2 Teaspoon Five Spice Powder
4 Tablespoons Coconut Milk -- Optional
Salt And Pepper -- To Taste
6 Tablespoons Water
2 Teaspoons Rice Wine
1 Teaspoon Sugar
2 Teaspoons Soy Sauce
1 Teaspoon Cornstarch -- Mixed With
2 Teaspoons Water

Directions
Stir fry the chicken in oil until lightly browned. Add onion and saute until transparent. Add ginger and chile, saute for 30 seconds. Add curry and five spice powders. Combine water, rice wine, sugar, soy sauce and cornstarch mixture. Add to pot. Cover and simmer for 10 minutes. Add coconut milk if using and simmer for 1 minute. Serve with rice.
Actually if you want to cheat, Wing Yip's concentrataed chinese curry sauce in a jar is spot on. It makes a fantastic curry with some chicken, mushroom and onion added to it. I buy mine from sainsburys.
Not a recipe but Asda do a chicken curry in a jar that tastes exactly like the stuff you get from a chinese!
Maysan Original Curry is also very similar to a Chinese curry, you can buy it in hot, medium or mild (i prefer the mild). It's concentrated, so you can use as much or as little as you wish. Just cook your ingredients & make up the curry and add & simmer. You can get this curry in fresh fish shops, fruit shops & butchers - though I've never seen it in the supermarkets
Try Mayflower Curry Sauce Mix from Morrison's. 99p and it does about 8 portions. You add water, simmer it or microwave it then add your meat and veg. I do this for the kids after school for a dead quick snack to shut them up.
