Tea cake or loaf..

Has anyone out there made tea cake, or sometimes called tea loaf, i lost the recipe i had, the last time i made it was years ago and i would like to make it again, the recipe where u soak the fruit in tea over night and throw all the ingrediants in and just mix.... thanks...

Lincolnshire Fruit Loaf

12oz mixed dried fruit soaked overnight with 4oz demarara sugar in 71/2 fluid oz cold tea (I use a mug of tea!) Next day, stir well as the sugar will sink to the bottom of the basin! Then add 1 beaten egg and 8oz self-raising flour. Mix well. Put in greased and lined 2-lb loaf tin and bake gas mark 3 or 180C for 1h 20mins. Test with a skewer - if it is not quite cooked give it 10 more mins. It's a very old recipe, hence pounds and ounces! Hope you can convert it if necessary!

this is one I make regularly..
1/4 lb brown sugar (not demerara)
1/2 lb mixed fruit
1/2 breakfast cup of cold tea

Let all stand overnight - then add

1/2 lb self-raising flour
l tablespoon of marmalade
small egg - well beaten

Beat well I use a one pound loaf tin with liner

Cook l hour 20 mins. @ Mark 3 - 325F

Do not open oven door for l hour

about the temperature (bara bryth)

I use an electric fan oven - thats why there's a difference in temperature- hope I have'nt confused you..
