I've been catching a few trout lately and would really like some recipes for them any ideas would be great

Try this for something a little different and easily made...

Baked Trout
2-3 trout (Medium size, about 10 to 12 ounces each)
2 tablespoons chopped parsley
2 tablespoons lemon juice
1� teaspoons seasoned salt
6 tablespoons olive oil
1 large onion-thinly sliced
2 cloves garlic
1 large tomato, thinly sliced
4 teaspoons white wine
Spray 13x9 inch pan with liquid shortening. Arrange fish in pan and sprinkle with parsley, lemon juice and salt. Heat oil in small skillet: fry onion and garlic till limp. Pour over fish. Place tomato on fish and pour wine over fish.

Bake 350 degrees (F) 30-45 minutes. Serves 2-3 .

The ones I catch are a bit bigger than the recipe says but I can modify it and enjoy!

Barbecued Trout with Fennel Butter

4 whole trout
1 tablespoon chopped fresh thyme
2 tablespoons extra virgin olive oil
salt and pepper

Fennel Butter
2 teaspoons fennel seeds
125g (4oz) butter, softened
1 tablespoon chopped fresh parsley
2 teaspoons lemon juice

Prep time: 10 minutes. plus marinating (for 1 hr)
Cooking time: 6-8 minutes
Serves: 4


The blackened trout recipe from the British Trout website is amazing - I don't do trout any other way now.

Get one prepared trout (gutted etc)
Brush with olive oil
Lay the trout on a large sheet of silver foil
Cover the trout in knobs of butter, garlic, fennel, parsley, dill, thyme, lemon slices, onion and anything else you want making sure the fish is coverd in all the bits and tuck a load in the cavity.
Wrap trout in the foil and bake in the oven for about 30 minutes.

What you catching your trout on seadart ?.....buzzers or lures. Used to find montana nymphs with dayglo green thorax worked well at this time of year.

I went out today and caught 2 Rainbows 3lb each on a green buzzer. My casting is not very good but as this is only the 7th time I've been out I was well pleased.There was a guy next to me who caught an 8lbr!
