alternitive to sprouting a mung bean?

can anyone tell me if there is an alternitive to sprouting mung beans?
my son is in reception class at school and they usually let kids sprout beans in class but my son is allergic to them so i was looking for an alternitive which would show the same effect of the sprout shooting up to the light.
pea's are out of the question also as he's allergic those too!

is he allergic to all beans as a runner bean seed would work or how about alfalfa sprouts they are similar to mung beans in speed of sprouting etc. Would the children actually be eating the end result or is your son allergic to just touching them, as I know when I worked in a school, they didn't eat the end product.

Thanks for that its a great help will be growing cress and will try mustard and the alfalfa sprouts if i can find them. in relation to your question yes touching beans will cause a reaction. The problem is we just don't know how bad it may be, so we can't take the risk in school.
