hi all, since ive been in straightened circumstances, i've been trying to cut our food bill. LAst weekend i bought a big beef joint and had roast on sunday and the leftovers fed the three of us till thursday. Pork was on offer this week, so i bought a big joint before really thinking. Beef lends itself to leftover meals, pork less so in my opinion. Anyone got any ideas, which are not stirfry?
Pork in a blanket - make a white sauce with cider or apple juice, add onions and apples and the cooked pork - put in a deep dish and cover with mashed spud and then bake.

I cut mine into smaller pieces and mix it in with the leftover, chopped up veg/spuds/stuffing etc and fry it in a bubble n squeek stylee. Lovely with pickle.
