I made a beautiful chicken stock with a carcass. It seems a shame just to make the usual cream of veg soup. Has anyone got a nice recipe of something different ?

Use it for rice. I cook up a Levi Roots Puerto Rican chicken and rice dish, where decent stock really makes a difference
I cook Shanghai Lion's Head meatballs in it...or prawn ball- very similar ingredients.

If you don't mind the faff, boil up the stock and keep reducing it until it almost sets. When it's cool you can cut it into cubes and freeze them, adding a cube at a time to any dish that you wish to improve.
