Reading a recipe from an American site and they have included Parmesan in the can. Now what could that be?

no, canned parmesan is common in the US. its like Swiss cheese....you can get "domestic or imported" lol
I keep mine in plastic box in the freezer, and just grate off what I need.
Keeps for ages.
Morrisons do a nice little tub of grated Italian cheese called, Fallini Formaggi. It's reasonably priced and lasts for ages.
