I wouldn't stuff them with anything - they are delicious plain grilled, or baked in sea salt.
forget stuffing it, Rub off the loose scales with a knife ( as many as possible)
(I am assuming its been gutted) , get some cooking foil, rub butter into it, lay the fish on the foil, put a couple of knobs of butter on the fish, add a bay leaf, fold it into a parcel so its sealed, stick into a hot oven for around 45 mins.
it will fall off the bone and taste delicious.
annie.
I have never cooked sea bass but the consensus seems to be to put herbs and some butter in the cavity and oven cook in foil.

Thanks all. I don't like sea bass but husband does and I thought it might be a bit different for him. I have never stuffed it before, just used butter and a few herbs as suggested, so will do it the same. Once again many thanks.
