recipes with defrosted bags of rasberrys

I have had freezer problems and now have 3 medium sized bags and raspberry's to use they have been in the fridge two days unopened but I need to come up with some uses.

I will start to look though through my recipe books here but wondered if there were any suggestions, other than just putting them on yogurt and other sweet related items etc

I have plain and sr flour, lots of butter, sugar, icing sugar , baking powder, eggs, most things just not weird items no ones heard off except delia

First reaction is to make a basic cake of muffin but OH has just been down the morrisions and bought a load of the blueberry muffins, and naughty mini donuts etc so ideally things other that cake but .I understand I maybe limited.

Any help would be really great, thanks in advance,

Blend & sieve them, add icing sugar to taste & use as a sauce for the cakes?..

if you make a coulis by heating the raspberries with the sugar, you can freeze it again. it will make a nice sauce,you can add alcohol to it, or thaw portions to make sorbet or icecream or add it to vodka or champers or white wine
Whilst you're discussing frozen fruit can someone tell me if I want to make a crumble using frozen berries do I have to defrost them first? Not used them before.

good idea but problem being since the freezer has been reloaded theres no room not even for a pea, so i think refreezing is a no go idea I am afraid
coulis with loads of sugar and a good splosh of alcohol will keep in the fridge in a sterile jar or bottle for 1 to 2 weeks

I think with a lot of frozen food Jan there is often hidden water content, so I don't know if you would end up with an over soggy crumble if you didn't defrost?? Maybe someone else will know?

oooww I would like Jam but I assume it is difficult to make plus I only have two expensive pans I don't want to burn them?

found a waitrose onlne recipe for raspberry jam so off to make it now, fingers crossed.

The Jams looking good, heres the recipe link for peeps, I never knew jam was this easy to make, I thought you needed loads of equipment and sugar thermometers etc like a ladies WI science lab, will inform you of the end result when cooled and set,....I think you need more equipment if you are making more jars and want them to go in the cupboard for 6 months but if you are just making it for yourself for the fridge, this is perfect, hoping OH will like it he's a big jam fan lol

How many have you got?If you've got enough and you're not in a hurry you could always convert it to alcohol

the recipe given on this site is Identical to the one I use and it makes a nice wine,I've also made the raspberry vodka and that never lasts long once the boss starts on it
Jan, bung the fruit in a plastic bag, run a sink of hot water and dump the bag in it for about 20 mins making sure that no water gets into the bag, OR dump the frozen fruit in a saucepan and warm gently. Keep any excess juice to warm up with sugar if the crumblr turns out dry

as promised my finding on the jam I made..... is that it is the best jam in the world, extremely proud of it, bf almost drinking the stuff, going to make more now..... would recommend to everyone to try, I like to bake bread and cakes various things but I have never made any thing so simple with just two ingredients with such great results, as me and the bf are huge jam eaters this is quite life changing....the start of life long 'jamming'
