oven too hot
What type of oven have you got? You didn't do what I did once did you and get fahrenheit and centigrade mixed up?
Does your oven thermostat work properly? Meringue has to be done on a very low heat. If you wait long enough you can even do it in the airing cupboard!

yeah i thought that too :'(

the burnt meringue is flat, but tastes nice if it hant been burnt :(
What temperature did you cook it on?
And what was in it?

omg barmad ur right :( i used the fahrenheit temp. :( aww im such a numpty, american recipe booooooooooooooo!
Most of us have done it at some point or another! You'll never do it again!!!!!!!

If you want a good meringue recipe, I can provide one that I use for pavlovas.
Life's too short ... microwave meringues are 'the new black'.

barmaid im new to this, and i just wanted something easy and simple, and using just sugar and egg whites, but i wouldnt mind trying your receipe :)

Naz (i thought you flown to germany?) - btw i did read about microwaving them but im a bit funny cooking eggs in the microwave...

thanks prudie :-)
I always use this recipe, it hasn't failed yet.

# Add one medium sized egg white to 250g sifted icing sugar and a drop of vanilla essence, mix to a dough.
# Divide into 8 portions and roll into a ball.
# Cook on grease proof paper, 2 at a time for 1 minute and 20 sec on full power - WATCHING CONSTANTLY, because when it 'happens', it happens quickly. You'll see what I mean lol.

.. and I haven't been, or planned to be in Germany for the last 29 years or so, you must've got me mixed up with someone else. :-)
Recipe is quite simple - you get crispy outside and slightly chewy inside.

Like a baking sheet with non stick paper.

Whisk 3 egg whites in a large bowl until stiff. Add 6 oz of sugar a third at a time, whisking well between each addition until stiff and shiny. Then fold in 1 tsp of cornflower, 1tsp of vinegar and 1/2 tsp of vanilla essence. Stick on baking tray and bake at 130 C (that's centigrade, lol) for 1 1/4 to 1 1/2 hours or until pale, brown and dry but a little soft in the centre.

Leave to cool then peel off paper. It may crack a bit but that's fine.

I have used this recipe for about 20 years. It's from the "Good Housekeeping New Step by Step Cookbook" which was my bible when I first started cooking.
Snowy - I think you got Naz mixed up with Nox. Nox flew to Stuttgart today to see his children!!!

Naz lives in Wales. With sheep.
Cuddled up to a warm sheep, or fighting over sunbeds with a sweaty German ... no contest really.
I buy mine ready done - not chewy inside, admittedly, but saves all the faffing about.
As I get older I resist buying stuff I can make very quickly - meringues take no time at all (the time is in the cooking) and home made are so much nicer than the shops (I like mine chewy not dry). But you are right Boxy, there are some good ones available this time of year.

I've even started making my own pastry. I am turning into my grandmother.
