anyone know how to make a souffle-ive always wanted to try one. Cheese or chocolate recipie please x

Take two eggs, crack them and separate the yokes (put in a separate bowl). Take the whites and whisk thoroughly until they are of 'meringue' consistancy. Grate about 100g of mature cheddar finely and mix with the yolks, add about 10ml of water and a large pinch of salt. Take a frying pan and put about 4cm cube of butter into it, warm it then add everything stirring quickly for a few seconds until all is about the same colour.
Keep a medium temperature and after about 5 min/(when it is firm), lift it with a spatula and turn it over. Gently cook for another 3 minutes or so then serve.
This is a rough guide, you will have to experiment!
(also, you can add finely chopped onions and garlic to the yolk before mixing in)
Errrr that's an omelette. Souffle is baked...
