Quite fancy making a risotto,i know that you have to use arborio rice, but they say it can be quite easy to botch it up,you keep stirring and add copious amounts of stock, anyone else made one and how did they get on?

Sorry risotto
This Waitrose one is simple enough Poodi .... but all risottos are time consuming with all that stirring - not something you can just leave to cook on it's own .... but give it a try.
Very easy....but time consuming. Worth it though.
It's very easy, just follow the directions and do not let it get dry (keep adding stock as soon as the previous stock is almost absorbed). It can get tedious so if you can get someone else to stir, that helps. Also if it's just you cooking don't make anything else that requires a lot of attention at the same time.
Sounds like too much hard work for me. I'll stick to my microwaved rice.
I find the stirring quite restful - also my risottos (or risotti if you prefer!) all involve a dollop of dry white wine which always leaves some over for the stirrer!
Here's a basic recipe with simple instructions from Jamie Oliver.

Thanks will have a go
It's really pretty easy to do...and worth the effort. I want to duplicate one I had last night...Wild Mushroom Risotto with Grilled Goats cheese on top.......divine.....and oh so fattening.
