Can I freeze roasted veggie couscous? Also, can I cook it (and other frozen homemade meals) straight from frozen in a microwave?

Cant see why not,but i would defrost meals and couscous and then reheat in microwave

yes to both your questions. many frozen foods give instructions how to microwave from frozen and it's the same for food you freeze yourself.
