Can anyone recommend a really good recipe for these. I know they are very basic so should be loads available. How do I make them "short" - is it in the fat used?

Hi this recipe is from a dairy diary i've made them once and they soon disappeared!!


Self rising flour 9oz 250g
butter 3oz 75g
dried mixed fruit 3oz 75g
caster sugar 3oz 75g (plus extra for sprinkling)
1 egg
pinch of salt


preheat oven to 190c/375f/gas 5 and butter a baking sheet

sift the flour into a bowl. cut the butter into pieces and then rub then into the flour. stir in the fruit, sugar , egg and salt. use a fork to work the mixture together into a stiff dough. divide the mixture into 12 roughly shaped balls and place on the baking sheet. roughen the surface of the cakes with a fork and sprinkle a little sugar over.

bake in centre of oven for 12-15 minutes until a light golden colour.

make a cup of tea and enjoy!

My old but reliable Be-ro cookbook suggests:-
8oz/200gms SR flour
3oz/75 gms sugar
3oz/75gms butter(cold)
4oz/100gms currants and peel
1 egg
little milk

Mix flour and sugar, rub in flour, add fruit.Mix to stiff dough with beaten egg and just a little milk. Make c. 14 rough lumps and put on greased baking sheet. Bake in hot oven 425-450 F/6-7 gas for 20 mins. Cool (if you can wait) and tuck in.
