My 6 year old son has recently been put on a dairy free diet by his doctor. I have one cake recipe that uses sunflower oil instead of butter. Does anyone have any other recipes we can try?

If you Google "vegan cake recipes" you will get loads. They often use oil and an egg replacer, either commercially bought (like Ener-G), unsweetened applesauce/puree or ground flaxseeds mixed with water (not sure if he is allowed eggs). Often recipe web sites have a rating system and people comment so you can see if the recipe actually works, produces a good result, tastes good, is hard ot make etc.
You should be able to replace the butter/margerine in almost any cake recipe with oil. I have been doing it for years. Also-a lot of American recipes will use oil instead.
if he is ok with eggs google "red velvet chocolate heartache" by harry eastwood. its a cook book with loads and loads of cake recipies that have the fat replaced by vegtables or nuts, sounds weird, but the recipes i have tried out (for my dad who says he can taste the fat in things and hates the taste )seem to work,
Vitalite spreading margarine is dairy free and workes well in baking and cooking. Substitute for the same amount of butter. Tastes awful by itself, but ok when cooked/baked/roasted etc. Tesco sells it.
