do you have to peel it or can the skin be eaten?

Skin can be eaten - No need to peel.

I have always eaten the skin, in fact, I've never seen it peeled.

If it's tough, you may want to discard it.
Although you don't have to salt aubergines any longer as they are no longer as bitter as they used to be it is still a good idea if you are thinking of frying them as they can absorp large amounts of oil and salting them will decrease their oil absorption.

Aubergines are like sponges and they soak up whatever flavours you use.

Ratatouille is good too. I like mousakka with aubergine.
I enjoy a potato & aubergine curry.

I cube it and chuck it in a spag bol. Aubergine is great, it goes with anything (probably because the taste is fairly neutral)
