How old does lamb have to be before it becomes mutton?

Usually a sheep that is more than one year old.

Just another thought why do "they" call it mutton and not sheep?

well if that's the case why is

cow known as beef
pig " " pork
deer " " venison

etc....

Do noy want an arguement it was just an observation!!

and....anyone noticed how butchers never seem to sell mutton anymore...just "lamb"?

Officially, meat labelled mutton is from a sheep aged two years or more. Lamb is up to one year old, and yearling lamb is 12 to 24 months old.
