ingredients

500g mince
cooking oil
1 teaspoon caraway seeds
1 small onion
salt & pepper to taste
1 teaspoon chilli powder
1 teaspoon grated ginger
1 teaspoon grated garlic
1/2 teaspoon tumeric (haldi)
approx 4-6 ounces frozen mixed vegetables
some chopped coriander

method

heat oil in pan & add the seeds, let them brown slightly.
Add the onion & fry until browned.
Add all the spices except for the coriander & mixed vegetables & fry for about a minute.
Add the mince and stir fry on a high heat until everything is coated.
Cover & cook for 5 minutes.
Now add the mixed vegetables, stir, cover & cook until tender.
Garnish with the coriander.

Arrange nachos (tortilla chips) in a plate, spoon some mince onto it, add dollops of salsa sauce, plenty of grated cheese & stick in the microwave until the cheese is melted, put some sour cream on top if you wish.Serve with a side salad.

I`ll drink to that JD! I shall add it to my repetoire of mince dishes. I heard that there is a programme on tonight with a recipe for mince that isn`t spa bol or cottage pie.
