Might be the variety of mint you have. I often mint my spuds and they come out lovely, are you using enough mint? you do need quite a lot.
I have common mint growing outside my back door, and when I boil potatoes I add a large handful of leaves to the saucepan - that would be about 10 large leaves. It needs quite a lot.

You could use commercial mint sauce, but I would stick with the natural stuff and add loads of it. It's very easy to grow, so much so that once it has established itself in the garden it is hard to get rid of!
easy peesy minted spuds ,try just adding fresh chopped mint and finely chopped shallots to your hot cooked spuds . Or cheats way is to add a couple of teaspoons of mint sauce. PS. dont forget butter.
