Monkfish is one of the few fish flavoursome enough to stand a tomato sauce. I do it in tomato and basil. A little cream to finish would be lovely and give you a really rich dish. Rice or mash would be a good accompaniment?
medico is right. Monkfish is very meaty and filling. A robust sauce would suit it better than a subtle, creamy one.
A cream, bacon and shallot sauce is excellent with monkfish.
Breadcrumbed and fried or in a curry/stir fry work a treat. If breadcrumbing, don't fillet it too thickly!
