beef mince - ideas needed

any suggestions as to what to do with some beef mince I've defrosted for dinner? It has to be healthy and low in calories / not need to many addtional ingrediants apart from the ones in stock cupboard
Getting bored of chilli con carne / meat balls / burgers
Need some inspiraction

risotto, mince and onions, spag bol
I regularly do a simple savoury mince. Brown a finely chopped onion with chopped garlic, add the mince, brown. A tin of tomatoes, an Oxo cube, Worcester sauce and hot tabasco to taste. I add cayenne pepper and chopped green chillies as well but you probably won't want to go that far. A few minutes from the end, add a good amount of frozen peas.

Serve with plain brown rice and white pepper.

bednobs, may i ask how you make the mince risotto?

fry the onion, ginger and mince, then add rice and stock?
Boiled mince?
fry mince - add onions and rice and tomatoes and water and cook - loveley!
Stuffed peppers!
Saute some chopped onion and green pepper in a saucepan. Throw in the hamburger meat, add about 1/4 envelope of Lipton's Onion Soup Mix and whatever spices and sauces that you want (Don't make it too liquidy), and cook until done. Then add a can of baked beans, a can of cream corn, and mix.....Very tasty.
fry onions, stir in pataks curry paste then stir in and fry your mince.
i havent tried this yet, but i promise i will. fry your onions, carrot, celery (whatever) - then, as your mince is frying, add horseradish to taste.
Exactly what Whiffey said, only also add onions and bisto.
