Roasted Beetroot, Courgette and Pepper

Can I roast all of these together, or should I do the beetroot on it's own? Also, should I boil the beetroot first? Should I peel and chop it, or cook whole?

it might be an idea to par boil the beetroot first depending on how tender it is.
Again depending on the size either halve it or quarter them.
Personally i'd keep it seperate from the other items because the juices will cause everything else to go purple (making it look the same) you could roast them together if you don't mind that.
I think you need to leave the skin and top and tail bits on to boil as it will 'bleed' worse otherwise.
The beetroot will also bleed if chopped when roasting it. You need to leave both the top and root on until cooked, however you cook it.
