I bought some fresh chicken fillets from the farm shop last weekend and put them immediately in the freezer. I took them out yest but then realised am not going to have chance to eat them as planned

Can I cook them (just plain George Forby(!) grill) and then slice and refreeze to use at a later date?

Yes, as long as they're thoroughly cooked through. The thorough cooking will kill off any bugs that might have multiplied while they were originally defrosting.
