Why do we eat blue cheese? When we turn our nose up at the mould on the chedder cheese in the fridge?

taste some roquefort and then you'll know why we eat blue cheese.
Also, there's several different types of 'mould'...the veining found in blue cheese is very different from the potentially harmful furry mould found on an old cheddar in the fridge.
