do you mean the shells? egg colouration in wild birds is a function of camouflage- the colours help the eggs blend in with the background so that predators cant see them. In domestic birds the colouration is often to do with breed- white hens lay white eggs, for example. the colou of the egg can be altered by feeding dyes to the chicken as well.
old cotswold legbar hens lay eggs in shades of blue...they are very tasty too, waitrose have them
I think that the diet they're fed can have some effect too.
