I run out of ideas for dinners each evening. I work all day so dont have lots of time for preparing but we eat well and try to be healthy with it. Just wondered what your favourite dinners are? i can hopefully try these to get a bit more variety to our 'usual' meals.

What Mr Wilsarnie calls Special Chicken...Fried (sorry not too healthy but in sunflower/rapeseed oil is ok) chopped chicken, onions and red pepper with paprika, black pepper and some of that Schwartz chicken seasoning stuff with some half fat creme fraiche mixed in.

Some steamed new potatoes and oodles of steamed greens (love 'em). Yummy.
I often struggle for new ideas for meals too, but these are two of my favourites..Hope this is of some help!
I love proper baked potatoes done in the oven with oil and salt on the skin, scoop out the middles and mix with cream cheese and smoked salmon and place under grill.. yum. My other favourite is Tuna Steaks grilled, then i make up a nice sauce with onions, ginger, capers, mustard and a few olives ( if you like them of course!), this is really tasty, serve it with some rocket and cous cous.. quick and easy!

My teenage children love stir frys. Thin strips of carrots, plus any other veg you like - I go for mange tout peas, broccolli, cauliflower, peppers, but you can use anything. I chop some chicken into small pieces, fry in vegetable oil and then toss the veg into frying pan to cook.. Meanwhile, boil some thin noodles, drain them and add to the pan along with your choice of stir fry sauce (available from supermarket). Most time consuming thing is chopping the veg. the actual cooking time is very quick.. Always goes down a treat in my house.
One of my fave, no effort teas is chicken browned in pan and mixed with pasta shells and jar of sacla pesto. It's lazy but tasty and takes about 10 mins!!
i've got loads, my current fave is hot smoked salmon flakes with an advocado, tomato and mozarella salad

Kebabs, any meat or veg ( i use peppers, olives, spring onion, babay corns) you like, marinade with a little olive oil, garlic & herbs parboil some new pots and thread together, the plonk under grill or on barbie.

get some pitta's warm, open up and put kebabs in, serve with homemade coleslaw


Here's something I put together the other night: I popped into Tesco before going home and grabbed a pack of ready-cooked mussels in white wine sauce from the chilled cabinet, some single cream, and a pack of potato cakes...

Finely chop a couple of onions, soften in olive oil. Add mussels, heat through. Add a bit of curry powder, frozen peas and cream. Pop the potato cakes in the toaster. Put the toasted potato cakes on a plate and pour mussels over.
Very very quick. While cooking your preferred pasta, in another saucepan saute some mushrooms (if veggie) or chicken cut into chunks, then add a jar of Dolmio Spicy Bolognese sauce (or sauce of your choice) and heat through. Drain the pasta add the sauce. Serve with grated parmesan/cheddar/mozzarella. 15 mins max.
Risotto is always a winner and dead easy. "Follow instructions on side of Packet". But i always make too much so I came up with a really easy way of using up the leftovers. What you need is some Mozzarella (the balls not that horrible grated stuff), tear one ball into about four pieces. Then WRAP your cold risotto around the mozzarella piece, then flour, egg and breadcrumb your Risotto Ball. (bought breadcrumbs are fine). Put in the fridge. or freezer When you come in from work just deep fry or bake your mozzarella / risotto ball until golden. When you cut into them the mozzarella is lovely and stringy with delicious risotto. It is perfect either by themselves with a little tomato salsa or with a piece of poached/baked fish.
A favourite of mine is Asda lamb chops with mint sauce, with fresh rosemary sprinkled over top and cooked on my healthy grill - while a potato bakes in the microwave and I also have salad as a side order with a rapeseed and balsamic vinegar dressing - yummy - that's what I'm having for tea tonight
