Hi there,


I am about to pop out the front of my house on the green and snip the elderflower heads off the massive elderflower tree. I have to do it now as I've noticed there are no cars in any of the drives and so noone will see me!


I need a recipe for elderflower cordial that will last until the winter once made. There are loads on the interweb, but I would prefer one that has been tried and thus recommended.

Elderflower Cordial


My wife's recipe.


21 Elderflowers


2 Unwaxed Lemons


2 1/2 oz Citric Acid


4 lbs Sugar


In a non metallic bowl place sliced lemons, add sugar, citric acid and washed picked elderflowers (cut away as much of the stalky bits as possible). Pour over 2 pints of boiling water. Put aside and stir regularly for 5 days. Strain and bottle. Dilute to taste. Always keep in the fridge, but if intending to keep till winter it is best frozen. If you bottle in plastic bottles they will be fine in the freezer.

Thanks Diamonson. I rather like Elderflower cordial with fizzy mineral water so like mimififi, I will be creeping out under cover of darkness to plunder my neighbour's elderflowers. Have previously always used the commercial varieties. Thanks for the frozen storage tip too.
