I want to cover the top of a sponge cake with melted Galaxy/Dairy Milk but when I do this it is lovely but so hard to cut through the top layer, can I add anything to the melted chocolate to make it still set but still be able to be cut through fairly easily with a knife. I have tried adding a little bit of water to the melted chocolate mixture which just makes it look as if it has curdled. Would something like glycerine work???
hot water and sugar , a wee bit of butter also when your melting it down , neither Galaxy nor DM had a high coco content so the melted chocolate is basicly melting down fats .That is why they harden .
Try a better brand of chocolate , green and blacks 70% is best.

Also try some american frostings tubs you can buy at any supermarket , chocolate fugde is a good one plus saves you the hassle
