sweet potato gone mushy

Whats the best way to cook sweet potatoes, mine always go mushy when I boil them. Thanks in advance.

I cut them into chunks and roast them in the oven with other veg.
I like them baked - just like a normal spud. Put a skewer through to cook it faster. Nice with a bit of butter and chili.
Or par boil them and then sautee them in butter mmmmmmm.......

rub a little olive oil on them and roast them whole in a casserole dish. Works best on the long thin ones as opposed to the ones that just look like orange potatoes.


Or mash them up with some butter, gorgeous :)

My American sister-in-law showed me how to boil them. You simply leave the skins on and, having scrubbed them, boil until tender (they'll cook faster than ordinary potatoes) and skin them by holding them in a tea-towel to protect your hands. However, I agree with the others- roasting is best; it's how we have them every week end!
They are very easily done in the microwave, and healthier too as the vitamins are not destroyed by longer cooking times, or dissolved in the water
